Method

Make the filling
Combine mince, onion, garlic, breadcrumbs, Worcestershire, fennel and parsley. Season and mix just until combined.

Roll
Cut each pastry sheet in half. Shape filling into four long logs and place along the pastry strips. Brush one long edge with egg and roll tightly to seal.

Portion
Cut each log in half for 8 bakery-size rolls. Place seam-side down on a lined tray. Brush with egg and scatter with sesame seeds if using.

Bake at 190°C fan-forced (210°C standard) for 22–27 minutes until the pastry is deeply golden and the filling is cooked through.

Rest 5 minutes, then deploy tomato sauce according to personal conviction.
