BBQ-Spiced Beef Bowl

with Garlic Couscous

Fast enough for a school night — smoky BBQ-spiced beef mince simmered into a thick sauce, spooned over garlicky couscous with a cold, sharp tomato-cucumber salsa and a spoon of yoghurt to cool it down.

Pantry basics not counted above: olive oil, butter for the couscous, and white wine vinegar for the salsa.

Method

  1. Make the garlic couscous

    Melt a little butter in a saucepan over medium heat and soften half the garlic, about a minute. Add the water and stock powder and bring to the boil, then stir in the couscous and a drizzle of oil. Cover, take off the heat, and leave for 5 minutes before fluffing with a fork.

  2. Mix the BBQ blend into the mince

    While the couscous steams, combine the beef mince with the BBQ blend and the remaining garlic in a bowl.

  3. Cook the beef

    Heat a drizzle of oil in a frying pan over medium-high heat and brown the mince, 4–5 minutes. Stir in the tomato paste and cook until fragrant, a minute, then add the water and beef stock powder. Drop the heat and simmer until it's thickened into a proper sauce, 4–5 minutes. Season.

  4. Make the salsa

    Finely chop the tomato and cucumber, then toss together with a drizzle of vinegar and oil. Season to taste.

  5. Serve

    Divide the garlic couscous between bowls, top with the BBQ beef, and serve with the yoghurt and salsa.
