Method

  1. Prep the squid

    Pat squid very dry. Slice into rings, or open tubes flat, lightly score the inside in a crosshatch and cut into bite-size pieces.

  2. Season the coating

    Mix cornflour, salt, white pepper and five-spice. Toss squid until lightly coated and shake off excess.

  3. Fry in batches

    Heat 1–2 cm oil over medium-high heat. Fry squid for about 60–90 seconds per batch until just golden and crisp. Do not overcrowd the pan.

  4. Finish hot

    Drain briefly, then toss with chilli and spring onion while still hot.

  5. Serve

    Add lemon wedges and mayo if using. Eat immediately — squid waits for nobody.

Tip: Overcooking turns squid rubbery; short and hot is the goal.
