Curried Cauliflower, Lentil & Haloumi Bowl

with Warm Tortillas & Coriander

Method

  1. Roast the cauliflower and potato

    Preheat the oven to 200°C fan-forced (220°C standard). Cut the cauliflower into small florets and the potato into bite-sized chunks. Toss on a lined tray with oil and half the curry blend. Roast until tender, 20–25 minutes.

  2. Get prepped

    Finely chop the onion and garlic. Slice the haloumi into thick slabs.

  3. Cook the haloumi and start the dal

    Heat a drizzle of oil in a large frying pan over medium-high heat and cook the haloumi until golden, 1–2 minutes a side. Set aside. In the same pan, cook the onion until softened, 4–5 minutes, then add the garlic, lentils and remaining curry blend and cook until fragrant, 1–2 minutes.

  4. Simmer the lentils

    Pour in the coconut milk, water and stock powder. Bring to a simmer, cover and cook on low until the lentils are tender, 12–15 minutes, stirring occasionally so nothing catches on the bottom.

  5. Warm the tortillas and bring it together

    While the lentils finish, warm the tortillas in a dry pan, 1–2 minutes a side. Stir the roasted cauliflower and potato through the lentils and season to taste.

  6. Serve

    Divide between bowls, top with the seared haloumi, scatter over the coriander, and serve with the warm tortillas on the side.
