Honey-Soy Sesame Beef Stir-Fry

with Garlic Rice

A proper hot-and-fast stir-fry — beef marinated in honey, soy and sesame while the rice cooks, then seared in batches over serious heat so it browns instead of stewing.

Pantry basics not counted above: olive oil for cooking, and a pinch of salt for the rice water.

Method

  1. Cook the garlic rice

    Melt the butter with a dash of oil in a saucepan over medium heat and soften the garlic, 1–2 minutes. Add the rice, water and a pinch of salt, bring to the boil, then cover and drop to low. Simmer 7–8 minutes, then turn the heat off and leave covered for a further 10 minutes.

  2. Marinate the beef

    While the rice cooks, combine the soy sauce, honey, water and sesame seeds in a bowl. Add the beef strips, toss to coat, and set aside.

  3. Stir-fry the veg

    Thinly slice the carrot into half-moons and trim the beans. Heat a drizzle of oil in a large frying pan over high heat and stir-fry the veg with a splash of water until just tender, 4–6 minutes. Season and set aside.

  4. Cook the beef

    Return the pan to high heat with a drizzle of oil. Lift the beef out of its marinade (keep the marinade) and stir-fry in batches until browned and just cooked, 1–2 minutes a batch — crowding the pan here steams the beef instead of searing it. Return everything to the pan — beef, veg and the leftover marinade — and toss until it's all combined and heated through, about a minute.

  5. Serve

    Divide the garlic rice between bowls and top with the beef stir-fry.

Batch tip: if your beef strips look crowded the moment they hit the pan, they are — split them into two or three batches. A hot, near-empty pan is what gives you a sear instead of grey, steamed beef.
