Seared Salmon with Mustard-Honey Greens

Our first seafood recipe, and a deliberately simple one — crisp-skinned salmon, greens blistered in the same pan, and a sharp mustard-honey dressing that does most of the work. Barely any washing up.

Method

  1. Get everything ready

    Trim the broccolini and halve any thick stalks lengthways so they cook evenly. Finely chop the garlic. Pat the salmon dry with paper towel and season both sides well — a dry surface is what gives you a crisp skin.

  2. Blister the greens

    Heat a drizzle of oil in a large frying pan over medium-high heat. Cook the broccolini and green beans until tender with a bit of colour, 5–6 minutes. Add the garlic for the last minute, then tip everything into a bowl and cover to keep warm.

  3. Sear the salmon

    Same pan, another drizzle of oil, back to medium-high heat. Lay the salmon skin-side down first and cook until the skin's crisp and the flesh is just cooked through, 2–4 minutes a side depending on thickness.

  4. Dress and serve

    Toss the warm greens with the mustard, honey and a drizzle of balsamic vinegar, and season to taste. Divide between plates with the salmon, and scatter the almonds over the greens.

Crisp-skin tip: don't move the salmon for the first couple of minutes — let the skin release from the pan on its own. Fighting it is how it tears instead of crisping.
