Sweet Soy Chicken & Egg Noodle Stir-Fry
with Crunchy Veg & Sesame
Our first noodle stir-fry with chicken instead of rice underneath — glossy sweet soy sauce, a proper crunch from capsicum and green beans, and a scatter of sesame seeds to finish. Genuinely quick.

Pantry basics not counted above: olive oil for cooking, and a pinch of salt for the noodle water.
Method

Cook the noodles
Bring a saucepan of salted water to the boil and cook the egg noodles to packet timing. Drain and toss with a drizzle of oil so they don't clump while you finish everything else.

Mix the sauce
While the noodles cook, whisk the soy sauce, honey, sesame oil, ginger and the cornflour together in a small bowl until the cornflour's dissolved.

Cook the chicken
Heat a drizzle of oil in a large frying pan over medium-high heat and stir-fry the chicken until browned and cooked through, 5–6 minutes.

Add the veg and sauce
Add the carrot, capsicum and green beans to the pan and stir-fry until just tender, 3–4 minutes. Add the garlic and cook for a minute, then pour in the sauce and toss until it thickens and coats everything, about a minute.

Combine and serve
Add the noodles to the pan and toss through until heated through and glossy. Divide between bowls and scatter with sesame seeds.
