Tofu & Veggie Coconut Curry
with Rice
The first vegetarian recipe on this page โ seared tofu and crisp veg in a curry-spiced coconut sauce, our own mild Malaysian-style blend instead of a mystery packet, over a bowl of rice.
Ingredients (for 2)
Pantry basics not counted above: olive oil for cooking. A standard tin of coconut milk is 400ml โ you'll have some left over at 2โ3 servings; it keeps in the fridge for a few days or freezes well.
Method

Cook the rice
Bring the water to the boil in a saucepan, stir in the rice, cover and drop the heat to low. Simmer for 7โ8 minutes, then turn the heat off completely and leave it covered for another 10 minutes to finish steaming.

Prep and coat the tofu
While the rice cooks, cut the carrot into matchsticks and trim the beans. Cube the tofu, then toss it in a bowl with half the curry blend and a drizzle of oil.

Sear the tofu
Heat a drizzle of oil in a large frying pan over medium-high heat and cook the tofu, turning occasionally, until golden on most sides, 3โ4 minutes. Set aside.

Cook the veg and the rest of the spice
Same pan, back to medium-high heat. Stir-fry the carrot and beans with a splash of water until just tender, 3โ4 minutes. Add the garlic, ginger and remaining curry blend, and cook until fragrant, 1 minute.

Make it a curry
Return the tofu to the pan, then pour in the coconut milk, soy sauce and brown sugar. Simmer until it's reduced slightly and everything's coated and glossy, 2โ3 minutes. Season to taste.

Serve
Divide the rice between bowls and spoon the curry over the top.
